Our sirloin steak is lean with a layering of fat to allow
for succulent flavours following cooking. It is cut from the sirloin from where
the T-bone, porterhouse, and club steaks are also cut. A very popular cut, the
sirloin comes from the upper middle of the cow. This is a part of the cow that
doesn’t do as much as other parts, for example, the neck, so it is very tender
and well-marbled with fat.
